Fluffy Dairy Free Fig Pancakes
Fluffy pancakes are the best, especially when they are dairy free. Try them with fresh figs, granola, and pure maple syrup to create a crunch with the soft, fluffy texture pancakes.

Ingredients
  • 1&1/2C All purpose flour
  • 1 T Baking Powder
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1&1/2C Almond milk(or milk of choice)
  • pinch salt
  • 3T olive oil
  • Granola(any kind)
  • Fresh Figs
  • Pure Maple Syrup
Instructions
  1. Add milk, eggs, vanilla, and olive oil into a large bowl. Mix well. Add in flour, baking powder, and salt. Mix until combined and smooth with some lumps. Heat up your skillet and use a 1/4 C to help pour batter onto the pan. Once bubbles form, flip to the other side. Repeat with the rest of the pancakes. Once done add your toppings and enjoy!
