Do you have a dish that just gives you that warm satisfied feeling–like you’re slipping into a warm bed on a cold night or slipping into a nice bubble bath with no kids around?
This brown rice noodle soup does just that for me. It is by far one of my favorite noodle soups to date. I use to hate Cilantro, but in the last year I have come to love the flavor of it. It’s weird how our palates can change like that. A noodle dish, in my opinion, needs to be full of flavor with a great textured noodle. This was my first time cooking with brown rice noodles. I was so surprised at how much I liked it. Usually the “healthier” noodles like wheat noodles are blegh. These noodles were nothing close to blegh. They cooked well and were soft and just everything you’d want in a good noodle.
This dish is full of flavor, with the cilantro and garlic adding a nice little bit of spiciness. Not so much that it over powers the dish, but enough to give the noodles some great flavor. The “Better Than Bouillon” is way more flavorful than I would have thought. I was expecting it to be kinda bland, but in no way is it bland. I am going to be using it in a lot more of my cooking.
So if you’re looking for a good noodle dish to serve up tonight, this is a perfect choice. It’s quick, it’s easy, and it’s perfect to cozy up with at the end of a long day.
