I made this Chia seed pudding last night and thought hey, lets switch it up and throw in some frozen wild blueberries. I am so happy I did. First of all, look at that beautiful blue color. A brightly colored dish that looks pretty nearly always makes the food more enjoyable. I’m a believer that food is supposed to be both fun and tasty!Not bland and drab. Don’t get me wrong, though, I enjoy eating toast and butter some mornings. But, I’m starting to figure out that breakfast is always better when I’ve got wild blueberry chia seed pudding on the menu!
The Chia seeds add volume and a wonderful pudding-like texture. Chia seeds are great for our bodies too. They can really help with getting you the energy you need for your morning and day. The seeds also fill you up quicker and can keep you full until lunch. I am always looking for low calorie but filling foods to keep me fuller longer!
Not a fan of blueberries? Substitute strawberries, kiwi, mango, etc. This is a very versatile recipe.
