When I was a kid, a “sandwich” meant a Peanut Butter and Jelly sandwich, every time. I’m sure there are many that can relate. PB&J is a delicious classic sandwich, but lets be honest . . . it gets old.
Over the past few months, I’ve been CRAVING vegetables constantly. I feel like I can’t get enough of them. So I’ve spent a lot of time creating and eating sandwiches like this one. Having just vegetables on a sandwich can be so tasty and so satisfying, and for this sandwich, it’s all about the crunch. I love the sensation of my teeth breaking through layers of fresh veggies. The sprouts, the cucumber, and the seeds in the bread combine perfectly to create well a balanced, flavorful texture. And then the tomatoes and vegan mayonnaise add a sweetness that tops it off so nicely.
As I said in my about me page, my son is allergic to dairy, and, though most mayonnaise brands don’t use dairy, I like to use the Just Mayo brand. No eggs and no dairy.
What vegetables do you like to put on your sandwiches? I know avocado is wonderful, but I bet shredded carrots or some spinach would be delicious as well!
